Crock-Pot Pot Roast

Mmmmm...

Easy!

-Sear the roast quickly in a pan and toss into the crock-pot

-de-glaze the pan with some garlic and red wine (I used Bota boxed wine) and dumped that into the crock-pot too

-then added one chopped tomato and one chopped onion and a handful of mushrooms

-added beef bullion to cover the roast

-set on low and off to work. Delicious when we got home and the house smelled amazing!

-Bon appétit!

Today was a blessed day!

Skipped the gym and was scooped up by my boss early so we could run a morning mission. It is Housekeeping Appreciation Week so we ran all over town getting enough Dunkin' for 100 plus people. We thought it would be smart to give them a heads up....we thought of this at 7pm...so less than 12 hours notice for the shops but it turned out hilariously well and three stops later and here we are!

That is a LOT of donuts...23 dozen in fact and there was a lot of giggling involved as we tried to wheel it all around and squeeze into the elevator.

After a merry morning we were then so blessed to have Thich Nhat Hanh on-site and I met him in passing before he went on stage to speak. He is a beautiful man, wearing long flowing brown robes. We made eye contact and each bowed with hands at heart and I stammered a "Namaste" in his direction as he continued on. It was so incredible to realize that I had just come into contact with perhaps the most enlightened person I may ever meet in my life in that moment. Wow.

I snuck away from my desk a bit later to listen for a few minutes at the back of the ballroom. He spoke about mindfulness and purpose. He pulled a folded piece of paper from his pocket and as he unfolded it and turned it to the side so the narrowest piece faced forward to create a divide in the air between his hands. He then proceeded to discuss suffering and the balance with happiness.  He spoke about how You should not be too afraid of suffering because you must know, like the left and the right of the paper, it is on the other side of happiness.  Without suffering there is no happiness. So insightful.

Shallowly (is that a word?!) finished my day with some self-indulgence at my new and favorite salon @SanelaSalon then next door to Barcelona for some tapas for dinner.

Getting ready to fall asleep now next to my sweet love who's already away in dreamland.

The next time I have a really rough one I will remember Thich Nhat Hant's thoughts about balance and finding peace and acceptance in suffering. And how, essentially, days like that...prepare us to appreciate days like this.

Today was just one of those just very rare. Very special. Very lovely days.

Chicken caprese salad

Sometimes...

Sometimes I forget that I'm brave.

Sometimes I forget the joy I get from loving and breathing life with reckless abandon.

Sometimes I forget that even a small step forward is still success.

Sometimes I forget to believe in myself and forget to compare myself only to the person I was yesterday.

Then sometimes I remember that being scared or overwhelmed can still be a victory. That feeling such strong feelings means that I'm alive. That I'm existing. That I'm noticing what my heart and my mind have to say.

As such, can recognizing that I'm feeling scared be viewed as a version of self-love? I can choose to take this feeling and use it as a tool and a reminder that I am here. That it is ok. That it is my internal alarm clock reminder to be present. And the greatest thing I can do for myself is to be present. And always to breathe...
